Salted Peanut Chews

So I just recently came to the realization that Easter is REALLY soon. Like way sooner than I thought..and I have nothing ready to share with you. So I'm dedicating this week to making some Easter recipes to share and hopefully I'll have them ready for you in the very near future.

But for now, you're stuck with this to hold you over. Which really isn't a bad thing because these were pretty delicious!

A layer of peanuts/rice krispies/peanut butter, on top of a layer of marshmallows, on top of a layer of soft, shortbread base. I don't know about you but that sounds pretty delicious to me!

Salted Peanut Chews
Prep Time: 30 minutes    Cook Time: 15 minutes      Yields about 36 squares

1 1/2 cups flour
2/3 cup brown sugar
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup unsalted butter, at room temp
1 tsp vanilla
2 egg yolks
3 cups miniature marshmallows

2/3 cup light corn syrup
3/4 cup unsalted butter
2 tsps vanilla
1 2/3 cups peanut butter chips
2 cups rice krispies cereal
2 cups salted peanuts

1) Preheat oven to 350 F.
2) In a large bowl, combine all base ingredients (except for the mini marshmallows) and beat until completely mixed. Mixture will be crumbly. Press into the bottom of a 9x13 inch pan.
3) Bake for 12-15 minutes, until golden brown. Immediately sprinkle marshmallows on top and bake for another 1-2 minutes.
4) In a large saucepan over medium-high heat, combine corn syrup, butter, vanilla and peanut butter chips. Stir until melted and smooth. Remove from heat and stir in rice krispies and peanuts. Spread evenly over top of the marshmallows. Chill until firm, then cut into squares. Store at room temperature.
