Chocolate Easter Nests

This weekend/week has not been very productive for me thus far. I have been absolutely wiped out by a serious flu since Sunday and have spent the vast majority of my time in bed sleeping, or sniffling and coughing myself into a fit.

Even though I was feeling so crappy, I really wanted to make an Easter recipe that I'd be able to share BEFORE Easter actually happened. So I chose the easiest one I could find!

These little nests are adorable and are actually super easy to make. They only have 6 ingredients and can be made super quickly. Best part is, they taste great and aren't actually that unhealthy! I'd say it's win-win.

Chocolate Easter Nests
Prep Time: 15-20mins     Chill Time: 1 hour     Yields 15 nests       (WW: 4pts per nest)

1/4 cup unsalted butter
225 grams good quality dark chocolate
3 Tbsps light corn syrup
1 Tbsp milk
4 heaping cups cornflakes
45 mini eggs

1)Line a muffin tin with muffin cups. Set aside.
2)  In a large saucepan over med-high heat, melt together butter, chocolate, and corn syrup. Stir until smooth and completely combined. Add milk and stir. Remove from heat.
3) Add cornflakes and stir to coat completely. Spoon cornflake mixture into each muffin cup. Top with three mini eggs.
4) Place in fridge to chill until the chocolate has set, about 1 hour. Store in the fridge in an airtight container.
