Red Velvet Cheesecake Brownies


Hello again! I know it has been a while, but that's because I was preparing a delicious Valentine's Day recipe for you.

I always feel badly because all the other food bloggers post multiple recipes for each special holiday throughout the year. I don't tend to make a lot of special holiday recipes, and if I DO end up making a good holiday-specific recipe, I'm too late to post it!

Let me just say, I've got some great Halloween and Christmas recipes already prepared for next year!



For Valentine's Day, I decided to be on the ball and post at least ONE good recipe that you could have before the actual day. Then perhaps you can make them for your special someone! I've always wanted to try making a red velvet cake, but I still haven't gotten around to it. I figured I could ease my way into it by making a red velvet square instead of a full-blown cake.

Trust me on this, you will not be disappointed by these brownies! They were super moist, and incredibly delicious, taking on the best qualities of a cheesecake and a brownie!

This Valentine's Day is particularly special for me because it is the first year in three years that the boyfriend and I will be together on the actual day. Being in a long-distance relationship for three years means that we've missed spending some of the smaller holidays together, and Valentine's Day was always especially tough. But this year we are actually together on the day, which makes me very happy!

Red Velvet Cheesecake Brownies
Cook Time: 35-40mins                Yields 16 squares

Ingredients:
THE BROWNIE BATTER
1/2 cup unsalted butter
2 oz good quality dark chocolate, chopped
1 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/2 tsps red food coloring
2/3 cup flour
1/4 tsp salt

THE CHEESECAKE BATTER
8 oz cream cheese
1/3 cup sugar
1 egg
1/2 tsp vanilla

Directions:
1) Preheat oven to 350 F. Grease the bottom and sides of an 8-inch baking pan and line the pan with parchment paper. Allow the ends of the paper to drape over the sides of the pan. Lightly grease the parchment paper.
2) In a microwave-safe bowl, melt the butter and dark chocolate until smooth and completely combined. Set aside to cool slightly.
3) In a large bowl whisk together sugar, eggs, vanilla and red food coloring. Add in the chocolate mixture, stirring until completely combined. Add the flour and salt and stir until no streaks of flour remain.
4) Pour the batter into the prepared pan and set aside.
5) In a large bowl beat the cream cheese until smooth. Add the sugar and beat until completely combined.
6) Add the eggs, one at a time, beating until just combined. Add vanilla. Drop spoonfuls of the cheesecake mixture on top of the brownie batter. Using a knife, swirl the two mixtures together, creating a marbled appearance.
7) Bake for 35-40 minutes, or until the batter is set and the edges are slightly browned. Let cool completely before cutting into squares.
