Spicy Beef Salad with Chipotle-Lime Dressing

Well, I'm back in Kingston once again. The holidays definitely went by too quickly but it does feel nice to return to my daily routines again. I am a bit nervous as I start my work placement tomorrow. I'm not quite sure what to expect but I'm sure it will be incredible!

Today I figured I would post a healthier recipe. If any of you are at all like me, then you'll be thinking back to all the desserts and unhealthy treats that you indulged in over the holidays and be woefully regretting it all (though, to be honest, it's near impossible to avoid indulging over the holidays, especially when so many treats are only around at that time of year!).

This salad is fresh and delicious, and straight from one of my WeightWatchers cookbooks, so that means it must be healthy, right? It makes a great lunch, or a delicious and light dinner. The beef helps to add a little protein and makes the meal well-rounded. All in all I think it would be a great post-holidays dish!

Spicy Beef Salad with Chipotle-Lime Dressing
Prep time: 20mins     Yields 4 servings       WW: 8pts/serving

1 Tbsp lime juice
1/2 tsp minced chipotles en adobo
1 tsp ground cumin
1/4 tsp salt
1/8 tsp ground black pepper
1 1/2 cups of fresh corn kernels (about 3 ears of corn)  **If you don't have fresh corn, you could substitute canned corn, though it is not as healthy or fresh, but sometimes seasonal vegetables aren't available so...**
1 large tomato, seeded and diced
1 avocado, pitted, peeled, and diced
1/2 cup fresh cilantro leaves
1 lb lean sirloin roast beef, cooked, thinly sliced and trimmed

1) In a large bowl, whisk together lime juice, chipotles, cumin, salt and pepper.
2) Add in all remaining ingredients except roast beef, and toss until vegetable are coated with dressing.
3) Divide roast beef evenly among the plates. Top with corn mixture and serve.
