Easy Peanut Butter Chocolate Chip Snacking Cake

It has been a while since I've posted anything but I just came off one of the busiest weeks of school yet, so I think it's allowed. I have been really stressed out and bogged dow with never-ending school things. But one GOOD thing that came out of this week is that I finally found out where I would be for placement in the new year. I'll be in Kingston (yay!) in my first choice placement spot (double yay!!) working in pediatric rehabilitation (triple yay!!!). I'm so excited about it and I am already looking forward to January!

I made this a couple weeks ago. I like that it's described as a "snacking cake" because it makes it feel like it's ok to have a piece of cake as a regular snack food :). It's actually super simple and easy to make (as the title suggests) and it's a fantastic choice if you want to make a quick dessert. You could dress it up a little too, if you wanted to ice it or add a glaze.

Easy Peanut Butter Chocolate Chip Snacking Cake
Bake Time: 45 mins     Yields 12-15 servings

1 package yellow cake mix
4 eggs
3/4 cup water
1/3 cup vegetable oil
1/3 cup creamy peanut butter
1 1/2 cups semisweet chocolate chips, divided
1/4 cup unsalted peanuts, chopped

1) Preheat oven to 350 F. Grease and lightly flour a 13x9 baking pan, set aside.
2) In a large mixing bowl, combine cake batter, eggs, water and oil and mix until completely combined. Blend in peanut butter.
3) Pour half the batter into the prepared pan. Sprinkle 3/4 cup of chocolate chips over the top of the batter. Spread the remaining batter on top and sprinkle the remaining chocolate chips and chopped peanuts over the top.
4) Bake for 45 minutes, or until wooden pick inserted in center comes out clean. Cool in the pan on a wire rack.
